DEICH-6102 - In preparation to mapping improvements

Tom Adam requested to merge DEICH-6102-mapping-improvements into DEICH-6102

Added tag to MarcRecord.DataField. This required introducing a builder pattern thanks to the sequential processing the way XML parsing happens.

Added many todos for the next week :)
