Re-added old mapping classes under package no.deichman.mimir.biblio.parse.old.
Added mapping.legacy to application.yml - this is picked up by ConverterService
Added legacy options to Source.format
Marked all temporary changes with // TODO:::LEGACY_MAPPING to make cleanup easier as legacy mapping is eliminated from the codebase.
